What Is Coconut Oil?
Coconuts, also known as the Plant of Life, are classified as a fibrous, one-seeded drupe, which is a fruit with a hard stony covering enclosing the seed (like a peach or olive). Coconut oil is derived from the meat of the coconut. When we talk about coconut oil on this site, we are always referring to un-refined, virgin coconut oil, preferably certified organic. This is important because pure, virgin coconut oil is made from fresh coconut meat and is usually obtained by one of two ways:
- Quick-drying, then pressing the oil out via mechanical means (as opposed to refined oil, which uses chemicals to extract the oil, or they are dried via unsanitary methods, thus requiring “refinement” to clean it after it’s been tainted.)
- Wet-milling, in which the meat is pressed without drying first, which produces coconut milk. The oil is then separated from the milk.
Why Coconut Oil?
Coconut oil once had a bad reputation because it was considered “fatty” and was full of saturated fat. However, several studies have looked at Pacific Island populations who get 3060% of their calories from fully saturated coconut oil and all of these populations have almost nonexistent cases of cardiovascular disease.
For years, health care professionals have been telling us that saturated fats are bad for us and lead to all sorts of negative health conditions such as obesity, heart disease, high cholesterol and other ailments.
What doctors and scientists haven’t said is that not all saturated fats are the same. Yes, most are bad, but coconut oil is healthy and we’re going to explain in a little detail why that is.
Coconut oil contains Lauric Acid which is found in human breast milk. Lauric acid is a Medium-Chain Fatty Acid, or MCFA. Olive oil, soy and vegetable oils are all Long-Chain Fatty Acids, or LCFAs. Medium-Chain Fatty Acids vs. Long-Chain Fatty Acids

Long-Chain Fatty Acids can be stored as fat in the body or they can be deposited in the arteries in lipid forms such as cholesterol.
Medium-Chain Fatty Acids are a whole different story. They are considered so nutritious they are used in baby formulas and to feed critically ill patients in hospitals. Here’s why:
- Medium-Chain Fatty Acids are smaller and are absorbed into cell membranes more easily.
- MCFAs don’t require special enzymes to break them down, therefore being easier on the digestive system.
- MCFAs are sent directly to the liver and converted to energy… NOT fat.
- MCFAs stimulate metabolism and aid in weight loss.
